BAGEL CHIPS

2 bagels
Oil olive
Parmesan cheese to sprinkle over
Sea salt
Paprika
Oregano

Slice the bagels as thinly as possible into oval shapes. Brush both sides with olive oil and place on a baking tray. Cover the chips with a topping or toppings of your choice – paprika, grated parmesan, ground sea salt and oregano are all good. Or do a mixture? Then place in an oven preheated to 180 for around 5 to 8 minutes, keeping a eye on the chips as they may burn. Serve. These are great with dips!

MARINATED OLIVES

Pitted Black Olives
Pitted Green Olives
3 Lemon slices
2 Dried red chillies
2 Garlic cloves, crushed
½ teaspoon Mustard seeds
½ teaspoon Black peppercorns
Pinch dried oregano
Olive oil

Place the olives, lemon slices, dried chillies, garlic cloves, mustard seeds, peppercorns and oregano in a bowl. Add olive oil until mixture is covered and mix well. Spoon in a jam jar with a tight-fitting lid. Close lid tightly and shake well. Allow to marinate for at least a week, turning jar every day.

Olives can be stored like this for up to 6 months in a cool place.
